Piña Colada
It STILL doesn’t feel like spring in Vermont. Fuck it. Let’s have a Piña Colada.
The Stuff You Need:
For each cocktail:
2 & 1/2 ounces Rum (I prefer dark rum, but the light rum works too)
2 Tablespoons Pineapple juice
5 Tablespoons Coconut milk*
ice
Garnish options: pineapple wedge, lime, orange slice, cherries, or, rim the glass with toasted coconut
How To Do This:
In a cocktail shaker combine the rum, pineapple juice and coconut milk. Add some ice, close your shaker and shake. Pour gently into a cocktail glass. Forget about your worries and enjoy your glass of sunshine. I promise, spring WILL come; someday.
Notes:
*I just use the canned coconut milk, but, when you first take it out of the can, the solids and liquids are separated. Scrape the entire contents into a microwave safe bowl or large glass measuring cup and warm it for 10 to 15 seconds. Whisk until smooth.
