Pimento Cheese

You can buy this anywhere in the South, but up here in Vermont, you have to make your own.  Luckily, this is not hard to do.  The only problem I’ve found with this tasty snack is that it never seems to last very long.

The Stuff You Need:

12 ounces sharp Cheddar Cheese, grated fine

3 Tablespoons Pimento Peppers, chopped fine*

1/8 teaspoon Sugar

1/8 teaspoon Cayenne pepper

1/2 Cup Mayonnaise

Here's How It's Done:

Grate your cheese, chop your pimentos, combine with sugar, Cayenne, and mayo and your done.  Sit down and enjoy.  You deserve it.

Notes:

I use my food processor to grate and then finely chop the cheese.  I then pulse in the other ingredients until I get the consistency I want.  It looks a little like orange cottage cheese.  Should be spreadable, not gloppy.

*You’ll find jarred Pimento peppers in the pickle aisle in most grocery stores.
