Gouda & Bacon Cheese Spread

This was part of my Christmas gift bags for my favorite foodie relatives.  It was a big hit!  It pairs well with any cracker. Simple but classy and loved by all.

The Stuff You Need:

4 ounces Gouda cheese, grated

4 ounces Cream Cheese, room temp

1/4 cup Parmesan cheese, grated

3 slices cooked Bacon, chopped

1/2 teaspoon Smoked Paprika

1/4 teaspoon Garlic powder

1/4 teaspoon Onion powder

1/8 teaspoon Cayenne pepper

1/4 cup dry White Wine

1/4 cup Mayonnaise

How To Do This:

  1. Grate the Gouda and Parmesan cheese.
  2. Toss seasonings into the grated cheese mixture.
  3. Whip the cream cheese in food processor or mixer, then add the mayonnaise, and then the wine.  You may need to stop and scrape the bowl a few times.
  4. Combine the seasoned cheese with the cream cheese mixture.

Notes:

This recipe made two 8 ounce jars of cheese spread, with a little to spare, which we devoured.

Discussion:

  1. Recipe lists cheese with two (2) types of measurement:
    4 ounces Gouda cheese, grated
    4 ounces Cream Cheese, room temp
    1/4 cup Parmesan cheese, grated
    Question: Is the 4 ounce reference (Gouda & Cream cheese) weight vs. Parmesan 1/4 cup (volume)?
    I’m a senior male and I do not know much about cooking standards-references.
