The Stuff You Need:
4 ounces Gouda cheese, grated
4 ounces Cream Cheese, room temp
1/4 cup Parmesan cheese, grated
3 slices cooked Bacon, chopped
1/2 teaspoon Smoked Paprika
1/4 teaspoon Garlic powder
1/4 teaspoon Onion powder
1/8 teaspoon Cayenne pepper
1/4 cup dry White Wine
1/4 cup Mayonnaise
How To Do This:
- Grate the Gouda and Parmesan cheese.
- Toss seasonings into the grated cheese mixture.
- Whip the cream cheese in food processor or mixer, then add the mayonnaise, and then the wine. You may need to stop and scrape the bowl a few times.
- Combine the seasoned cheese with the cream cheese mixture.
Notes:
This recipe made two 8 ounce jars of cheese spread, with a little to spare, which we devoured.

Question: Is the 4 ounce reference (Gouda & Cream cheese) weight vs. Parmesan 1/4 cup (volume)?

You had it right. Gouda and cream cheese is measured by weight and the Parmesan is measured by volume.
