Cobb Salad

  This has been a classic in America for over 75 years.  If you are not familiar with it, check it out.  Sure to satisfy on a hot summer evening.

The Stuff You Need:

Ingredients for two classic salads

Chicken Breast – 1 each if small, or a larger one can be shared  – or – 6 each Jumbo Shrimp

Greens – Romaine, Iceberg, or a mix

Avocado – half each, sliced and sprinkled with lime juice and salt

Red Onion- shaved, a slice or two each.

Cherry tomatoes – 3 or 5 each

Cucumber – 4 or 5 slices each

Hard Boiled Egg – half each, sliced

Bacon – 4 slices, cooked, drained and crumbled

Stupid Easy Croutons (optional)

Dressing: Bleu Cheese or Ranch

Here's How It's Done:

  1. Prepare your protein of choice.  If using Chicken,* grill or saute.  If using Shrimp, steam or grill.
  2. Arrange your choice of lettuce on the center of the plates.  Arrange the avocado, onion, tomatoes, cucumber and egg around the greens.  Top the greens with sliced cooked chicken or shrimp, add your dressing of choice, and garnish with the bacon crumbles and croutons, if using.

Notes:

*Chicken breast can be tenderized with a meat mallet, marinated in buttermilk ahead of time, or just seasoned with salt and pepper before cooking.
