This herb filled vinaigrette is packed with the flavors of Greece.  With minimal effort you can create this delicious dressing that will boost any salad to the top of Mount Olympus.  Not only is it great on salad, it can also double as a meat marinade.

The Stuff You Need:

2 teaspoons chopped fresh Tarragon

2 teaspoons chopped fresh Dill

2 or 3 Tablespoons finely chopped Scallion

3 teaspoons finely chopped fresh Parsley

1 small clove Garlic, minced

pinch of Lemon zest

Salt & Pepper, to taste

2 teaspoons Dijon mustard

1/4 cup Red Wine Vinegar

2/3 cup Olive Oil (My Blue Kitchen Lemon flavored cooking oil would also work here)

Here's How It's Done:

  1. Chop all herbs, scallion, and garlic.  Combine in a bowl and add lemon zest, salt & pepper, Dijon.
  2. Whisk in red wine vinegar and olive oil.
  3. Transfer to glass jar or cruet.  Shake before serving.

Notes:

This dressing can also be used as a meat marinade.
